Tamarind Juicery, fruit and vegetable juices in Florence
I have to introduce you to a group of special friends who always support the non-profit organization olympics that has brought a special place in Italy in the heart of Florence in via dei neri, the most crowded street for young people who can enjoy unheard-of specialties and nutrients to enjoy a lot of fruit that comes from a special machine that presses fruit and gets a delicious and tasty drink.
here is the story of these young entrepreneurs to whom I wish so much success because I'm sure of their skill, professionalism and generosity when it comes to helping the most unlucky.
In the heart of Florence, since the month of June, Tamarindo Juicery has opened, an idea of three young entrepreneurs: Cesare Cacciapuoti, the financial-operating "strategist" with the vocation for the development of new activities, Nicolò De Gregorio, in how (and the selected supplies) of a family that has been operating in the fruit and vegetable sector for 70 years, and Silvia Bartolomei, an entrepreneur in the catering sector with experience in the fruit and vegetable sector.
A new place, which focuses on the combination of taste and health, pleasure and well-being, thanks to the fresh fruit and vegetable juices that, besides being refreshing, provide our body with a significant amount of energy, vitamins, minerals and all substances essential nutrients to our body but often, due to the cooking of food, we can not take.
"We wanted to offer a new mode of consumption of fruit and vegetables that would give everyone the opportunity to eat quality products in a practical, fast and accessible way - the three entrepreneurs say - So we were among the first to offer pressed fruit juices cold and the first to bring in the Italian shops the visual pressing, in front of the customer ".
" We have different mixes according to the tastes of the customers - add Cesare, Nicolò and Silvia - for a first taste there is apple and mint or pineapple and basil; for the most radical the Green Monster, with black cabbage, celery, cucumber, spinach, parsley, fennel and lemon ".
Friends, here is the complete interview I made to the three young entrepreneurs:
• HOW WAS THE IDEA OF THIS ACTIVITY BORN?
From our travels and stays abroad we realized the lack in Italy of premises where you can find fresh and quality fruit and vegetables, ready to be consumed. We wanted to do something that would go against the Italian habit of eating only cooked vegetables, when instead they are much healthier to eat them raw, as well as fruit, because they retain unaltered all the organoleptic properties.
• SO WHAT IS THE STRENGTH OF
Our strong point is raw, fresh and quality fruit and vegetable juices. We make them in front of our customers, who at the counter can see the whole phase of realization that does not include any kind of addition, neither preservatives nor sweeteners, but only fruits and vegetables.
• FROM THE POINT OF VIEW HEALING WHAT ARE THE BENEFITS?
If we think that drinking half a liter of juice is like eating a kilo and a half of fruit and vegetables, which corresponds to the quantity needed to make half a liter of juice, we can understand the nutritional quantity of raw fruits and vegetables that we ingest with all the properties nutritional.
• THREE REASONS TO COME TO YOUR "JUICERIA"
The possibility to eat fruit and vegetables in a tasty, healthy and quality way. These three combinations are not always possible in food.
As soon as we start drinking these juices, we will soon be able to do without them, because our body derives benefits and therefore makes us feel the need to consume them continuously.
• IN THIS RESPONSE IS THE POSSIBILITY OF CONSUMING IT ALSO AT HOME OR THERE IS IT POSSIBLE ONLY IN YOUR LOCAL?
Precisely to meet the needs of many people who want to drink the juices at home, once squeezed we bottle them to give them the opportunity to take them home keeping the same freshness.
• UNDER VEGETABLE IS NOT MORE RELATED TO THE ROLE OF "CONTOUR" ON OUR TABLE ...
We must break this idea of fruit and vegetables as a side dish with meals as they are main foods. Fruits and vegetables are the basis of the food pyramid and this sometimes we forget it. It is absurd that today many people take food supplements when a daily use of fruit and vegetables is sufficient.
• WHAT ARE THE COMMENTS FROM CUSTOMERS WHO COME TO TAMARINDO JUICERY?
They thank us, they are happy to find a place that matches taste with what is healthy. Many tourists tell us that in Italy they do not find this type of premises that instead are present in Australia or United States.
• BUT THE JUICE THAT YOU OBTAIN IN WHAT DIFFERES RESPECT TO THAT REALIZED AT HOME WITH A SIMPLE TRADITIONAL EXTRACTOR?
The machines we have in our laboratory allow us to obtain the juice with a different process, which maintains the organoleptic properties of fruit and vegetables unaltered. Instead a normal extractor transforms and alters the product more than our machines that do not use the foils but which, by a special process, break up fruit and vegetables and pass it all in a filter bag, ensuring a higher quality of fruit juice and vegetables, which do not heat up, do not oxidize.
When the pulp is pressed between two plates, the juice incorporates less oxygen than in a machine where a rotation occurs. Therefore, the higher oxygen concentration ensures a higher quality, especially if bottled juice will be consumed later. With this treatment we ensure a juice that spoils, from a nutritional and organoleptic point of view, much slower than the other methods.
• WHAT TYPE OF MACHINERY USED
TO EXTRACT JUICE?
We use a two-meter high press with a weight of 320 kilos, which costs tens of thousands of euros. It is a latest generation machine made in Spain and at the moment there are very few examples all over the world. We are the first that we carry out the pressing with the machinery in front of the customer's eyes. Practically our laboratory in operation is visible from the counter to all customers, this to give absolute transparency while preparing the juices.
• DO YOU PREVENT THAT YOU CAN BE A QUICK DIFFUSION OF LOCALS LIKE YOUR?
We would be happy if this type of proposal spread quickly because it represents a philosophy of life, with the certainty that a greater consumption of fresh fruit and raw vegetables would reduce many chronic diseases of the digestive system and beyond. Practicality and accessibility to these foods are two reasons that help to take more fruits and vegetables even to those who do not have the time or the patience to prepare at home the juices of this type. It is important to combine the need to offer tasty and at the same time very healthy products.
• IN ADDITION TO TASTE THE VARIOUS JUICES BASED ON FRUIT AND VEGETABLES, IS IT POSSIBLE ALSO TO STAY AT LUNCH OR DINNER?
We have a complete menu. In all our salad dishes we insert a series of foods that allow you to make a complete meal from a nutritional point of view. Salad considered no longer a mere side dish but, thanks to a set of vegetables, fruit, seeds, nuts and the ability to add vegetable or animal proteins - from cheese to bresaola to roast ham - becomes a complete meal. One eats a salad and has everything the body needs.
One thing we want to say is that in addition to the juices all the menu we prepare is homemade: salads, soups, croutons, special dishes such as hummus "bruschetta" or avocado "special" with Tuscan pecorino and chilli and others ... We also have desserts and a coffee corner.
